Blueberry Stracciatella Ice Cream

with Fresubin PLANT-BASED Drink

Ingredients

1 bottle (200 ml) Fresubin PLANT-BASED Drink Vanilla flavour
50 g Blueberries
10 g Vegan chocolate
1 tbsp. Lemon juice
Optional Whipped cream and blueberries to garnish (optional)

Preparation

  1. Freeze the Fresubin® PLANT-BASED Drink Vanilla flavour in an ice tray the day before. Wash the blueberries, pat dry, then freeze them as well.
  2. Finely chop the chocolate. Combine the blueberries, frozen Fresubin® PLANT-BASED Drink Vanilla flavour cubes, and lemon juice in a mixer and purée on the highest setting for a few seconds. Add the chocolate pieces and combine on a lower setting.
  3. Use a spoon or ice cream scoop to scoop out the ice cream and transfer to a small bowl. Optionally, you can top each serving with a dollop of whipped cream and a few blueberries.

This ice cream is also delicious made with cherries, plums or raspberries. When these fruits are not in season, it can also be made with frozen fruit. For hygienic reasons, it is best to briefly cook frozen fruit before using. If you don’t have a high-power mixer, you can purée the fruit, lemon juice, and Fresubin® PLANT-BASED Drink Vanilla flavour and then transfer the mixture to ice pop molds. In that case, it is best to omit the chocolate, as it would sink to the bottom of the mold during freezing.
