
Apple Carrot Fusion Soup
with Fresubin PLANT-BASED Drink
Ingredients
1 bottle (200 ml) | Fresubin PLANT-BASED Drink Vanilla flavour |
½ | Apple |
125 g | Carrots |
1 | Very small onion or shallot |
100 ml | Vegetable broth or stock |
1–2 tbsp. | Lemon juice |
Salt, pepper, ground nutmeg | |
½ tsp. | Aromatic oil such as pumpkin seed oil, toasted sesame oil, or garlic oil |
Preparation
- Peel and core the apple. Peel the carrots and onion as well. Dice the apple, carrots, and onion. Wash the chives, shake dry, and chop.
- Heat the diced vegetables and apples with the vegetable broth or stock, then cover and cook for 10 to 15 minutes. Add Fresubin® PLANT-BASED Drink Vanilla flavour and purée the soup finely. If the soup is too thick, add a bit more broth. Season to taste with lemon juice, salt, pepper, and nutmeg.
- After pouring the soup into the bowl, drizzle aromatic oil on it, then sprinkle with chopped chives.
You can add a small piece of minced fresh ginger root to the pot with the diced vegetables and apples if you like.
